The Santoku is the traditional Japanese form of the kitchen knife, comparable to the chef's knife. The name "three virtues" comes from its universal uses for cutting fish, meat, and vegetables.

A VG MAX steel with a hardness of 61 (±1) HRC is the main component of the entire blade, extending to the cutting edge. The 32 layers of damascus steel give the knife its unmatched anatomy, with a stable blade that is both hard and soft due to the two components. The Shun Classic blades feature a symmetrical bevel.
