Santoku is the traditional Japanese form of kitchen knife, comparable to a chef's knife. The name, with its three advantages, comes from its universal use for cutting fish, meat and vegetables.

A VG MAX steel with a hardness of 61 (±1) HRC is the main component of the entire blade, right down to the cutting edge. The 32 layers of damascus steel give the knife its unrivalled anatomy, with a stable blade that is both hard and soft thanks to the two components. Shun Classic blades are symmetrically ground.
