Yanagiba is the traditional Japanese slicing knife. With its narrow blade, hollow on one side and relatively long, the knife is particularly suitable for very thin cuts. The knife guarantees a perfectly clean and smooth cut. These cuts are particularly important when preparing sushi. The length and shape of the blade allow for a long cutting movement.

Les lames de la gamme Seki Magoroku Redwood sont en acier au carbone 1K6 d'une dureté de 57 (±1) HRC.

Le manche en forme traditionnelle de châtaigne est composé de bois Pakka. Les résines de haute qualité ajoutées au bois rendent le matériau particulièrement robuste et résistant à l'humidité. La finesse du manche assure une prise en main facile et agréable. Le manche et la lame sont enclavés l'un dans l'autre et reliés par une mitre en polycarbonate noir brillant.
