the kai range

Since its beginnings in 1908, KAÏ's mission has been to make unique knives for everyday use. KAÏ kitchen knives are the quintessence of Japanese blacksmithing expertise, crafted from natural resources using the profiles and methods of the ancestral art of samurai blacksmithing. From the definition of the design to the finishing of each knife, the development of a high-quality product is the focus of all our attention.

why choose this knife?

yanagiba

Yanagiba is the traditional Japanese slicing knife. With its narrow blade, hollow on one side and relatively long, the knife is particularly suitable for very thin cuts. The knife guarantees a perfectly clean and smooth cut. These cuts are particularly important when preparing sushi. The length and shape of the blade allow for a long cutting movement.

material

The blades in the Seki Magoroku Redwood range are made from 1K6 carbon steel with a hardness of 57 (±1) HRC.

The traditional chestnut-shaped handle is made from Pakka wood. The high-quality resins added to the wood make the material particularly robust and moisture-resistant. The thinness of the handle makes it easy and comfortable to hold. The handle and blade are interlocked and joined by a glossy black polycarbonate bolster.
